QUICK JOLLOF RICE
Quick Jollof Rice
When you need it right now!
Yield: 3-4 servings
PREP IT!
1 tablespoon Red Palm Oil
2 tablespoons Vegetable Oil
1 cup Onion, yellow, large, diced small
4 teaspoons Tomato Paste
1½ teaspoons Taste Tutor Seasoning 101
3 tablespoons Taste Tutor Jollof Seasoning
1½ cup Broth (chicken, beef, or vegetable)
1 cup Rice, parboiled long grain, washed
MAKE IT!
In a large pot, over medium high heat, sauté onions in red palm and vegetable oils.
Add tomato paste and fry until tomato paste darkens in color.
Add Taste Tutor Seasoning 101 and Taste Tutor Jollof Seasoning and fry until seasonings smell toasted.
Add in broth and bring to a boil.
Add rice. Cover pot with foil and then with lid to trap the steam in. Reduce heat to very low and allow rice to cook until tender, about 30 to 40 minutes.
Serve with assorted meats (goat, ponmo, chicken, smoked fish, beef, etc) and/or vegetables and enjoy!
