ROASTED JALAPENO GUACAMOLE - Plant Based

Roasted Jalapeno Guacamole
Quick and easy guacamole…

Yield: 2-3 servings

PREP IT!

  • 1 large Jalapeño pepper, split in half and roasted (roasting is optional)

  • 1 teaspoon Oil, any kind

  • ¾ cup (1 small) Yellow onion, diced small

  • 1 clove Garlic, minced

  • 2 large Roma tomatoes, seeded and diced small

  • 2 tablespoons Cilantro, fresh, chopped

  • 3 large Haas avocados, large, halved, seeded and scooped out

  • 1½ teaspoon Lime juice

  • 2 teaspoons Taste Tutor Seasoning 101

  • ½ teaspoon Taste Tutor Piri Piri Seasoning

  • ¾ teaspoon Cumin, ground

PREP IT!

  1. Preheat oven to 425F. Preheat oven to 425F. Toss jalapenos in oil. Spread jalapenos, with space in between each half, in a single layer, cut side down, on a sheet tray. Place sheet tray on the bottom rack of the oven. Roast jalapenos for 25 to 30 minutes or until desired roast is achieved. You can also skip this part and use the jalapenos raw.

  2. Dice onion, roasted jalapeno, garlic, tomatoes, and cilantro. Set aside.

  3. Half, seed, and scoop avocado meat out of skins. Place into a large bowl and roughly smash the avocado meat. Toss avocados in lime juice to prevent browning.

  4. Add diced onion, roasted jalapeno, garlic, tomatoes, cilantro, Taste Tutor Seasoning 101, Taste Tutor Piri Piri Seasoning, and cumin to bowl. Gently stir all ingredients together and enjoy!
