SPICED HAZELNUT SWEET POTATO PIE

Spiced Hazelnut Sweet Potato Pie

This recipe won me a scholarship for school…

Yield: 2 x 10-inch pie crusts or 29 mini graham cracker pie crusts

PREP IT!      

  • ½ cup Sugar, granulated

  • ½ Cup Brown sugar, dark

  • 2¼ teaspoons Taste Tutor Brown Spice

  • ¾ teaspoon Salt

  • ¾ teaspoon Baking powder

  • 3 tablespoons Flour, all-purpose

  • 4½ tablespoons Butter, salted, melted

  • 1½ tablespoon Hazelnut syrup, used for coffee drinks (optional but I like it)

  • ¼ teaspoon Orange extract

  • 1½ teaspoon Lemon juice

  • 1 tablespoon Vanilla extract

  • 1½ tablespoon Corn syrup, light or dark

  • ½ cup Eggnog or Evaporated milk

  • 3 each Eggs, separated, whip egg whites

  • 3½ tablespoons Butter, salted, melted, for brushing

  • 6 cups (about 3-4 very large sweet potatoes) Sweet potato, roasted, drained, mashed

  • 2 x 10-inch pie crusts (any kind) or 29 mini graham cracker pie crusts (I prefer graham cracker crusts)

MAKE IT!

  1. Whisk all ingredients together except mashed sweet potatoes and whipped egg whites.

  2. Gently stir in mashed sweet potatoes and then fold in whipped egg whites.

  3. Distribute filling into desired pie crusts. Brush pie crust edges with melted butter.

  4. Bake at 350F for 30 - 40 minutes or until filling is set.

Tip: Enjoy warm or at room temperature with ice cream or fresh vanilla whipped cream.

Reheat leftovers: in the oven or in the microwave.
