FRESH TOMATO & ONION SAUCE
Inspired by the delicious sauce that was served with mostly every meal I had in Togo and Benin…
Yield: 2-3 servings
PREP IT!
3 Roma Tomatoes, large
½ Red Onion, large
½ Chili Pepper (Optional), I used habanero
1 tablespoon Taste Tutor Seasoning 101 (link to purchase in bio)
1 Bay Leaf, large
1 tablespoon Vegetable Oil
1 tablespoons Taste Tutor Seasoning 101
MAKE IT!
Slice tomatoes and onions.
In a heated pot or skillet, add oil and sauté onions until slightly soft.
Add remaining ingredients and cook down for 5-6 minutes or until tomatoes and onions are soft and flavors meld.
Enjoy with whatever foods you like! I had it with grilled fish most often.
Tip:
Store leftovers: in the fridge for up to 1 day.
