Fresh Tomato & Onion Sauce

Inspired by the delicious sauce that was served with mostly every meal I had in Togo and Benin…

Yield: 2-3 servings

PREP IT!             

  • 3 Roma Tomatoes, large

  • ½ Red Onion, large

  • ½ Chili Pepper (Optional), I used habanero

  • 1 tablespoon Taste Tutor Seasoning 101 (link to purchase in bio)

  • 1 Bay Leaf, large

  • 1 tablespoon Vegetable Oil

  • 1 tablespoons Taste Tutor Seasoning 101

MAKE IT!

  1. Slice tomatoes and onions.

  2. In a heated pot or skillet, add oil and sauté onions until slightly soft.

  3. Add remaining ingredients and cook down for 5-6 minutes or until tomatoes and onions are soft and flavors meld. 

  4. Enjoy with whatever foods you like! I had it with grilled fish most often.
