FRESH CARIBBEAN GREEN SEASONING
Fresh Caribbean Green Seasoning
Adapted from a verbal recipe I got from my Anguillian cousin from her grandma. Use as a marinade for all your favorite Caribbean recipes.
Yield: 1 batch (3 cups)
PREP IT!
1 bunch Culantro or Cilantro
½ inch Ginger, fresh
1 stalk Celery (including leaves)
1 head Garlic (about 11-16 cloves)
4 each Scallions (green onion)
¾ cup Thyme, fresh or dried
¼ cup Water
¼ teaspoon Salt
2-3 Shallots
2 each Pimento peppers (or substitute banana peppers or cubanelle peppers or anaheim peppers)
MAKE IT!
In a blender, add all ingredients. Blend until smooth.
Tip: Make a big batch and freeze for later.
